Popover Muffins
Yield: 12 muffins
Ingredients
| 2 | cups | all purpose flour | |

| 1/3 | cup | sugar | |
|
|
|||
| 1 | tablespoon | baking powder | |
|
|
|||
| 1/2 | teaspoon | salt | |
|
|
|||
| 4 | eggs | ||
|
|
|||
| 1/2 | cup | milk | |
|
|
|||
| 1/4 | cup | shortening, melted | |
|
|
|||
Directions:
Grease 12 muffin cups. In large mixing bowl, stir together flour, sugar, baking powder and salt. Make a well in the center. In a medium bowl, combine eggs, milk and melted shortening; add all at once to flour mixture. Stir with a fork until the dry ingredients are just moistened. Fill muffin cups allmost full. Bake in a 400 degree oven for about 15 minutes or until muffins are golden. Remove from pan and serve warm.
