Squash Souffle
Yield: Serves 4
Ingredients
| 4 | medium yellow squash, sliced | ||

|||
| 1 | medium onion, chopped | ||
|
|
|||
| Salt and pepper to taste | |||
|
|
|||
| 4 | saltine crackers, crushed | ||
|
|
|||
| 4 | tablespoons | melted butter | |
|
|
|||
| 2 | eggs, separated | ||
|
|
|||
| 1/3 | cup | grated cheese (cheddar or peppered cheese is good) | |
|
|
|||
Directions:
Steam onion and squash together until tender. Drain excess water and mash well. Add crushed crackers, salt, pepper, butter, 2 beaten egg yokes and cheese. Blend well. Fold in 2 stiffly beaten egg whites. Pour into greased baking dish and bake at 350 degrees about 45 minutes or until set and slightly brown.
