Peanut Butter and Jelly Mini-Muffins
Perfect after school snack
Yield: 2 dozen muffins
Ingredients
| 1 | cup | flour | |

| 1 | teaspoon | baking powder | |
|
|
|||
| 1/2 | teaspoon | baking soda | |
|
|
|||
| 1/8 | teaspoon | salt | |
|
|
|||
| 1/2 | cup | firmly packed brown sugar | |
|
|
|||
| 1/2 | cup | vanilla yogurt | |
|
|
|||
| 1 | tablespoon | vegetable oil | |
|
|
|||
| 2 | tablespoons | creamy peanut butter | |
|
|
|||
| 2 | eggs | ||
|
|
|||
| Non stick spray for pans | |||
|
|
|||
| Strawberry or grape jelly | |||
|
|
|||
Directions:
Combine flour, baking powder, soda and salt in large mixing bowl. In separate bowl, combine brown sugar, yogurt, oil, peanut butter and eggs. Mix until blended. Add to dry ingredients and stir just until well moistened. Coat mini-muffin pans with cooking spray. Fill cups about half full. Top each with 1/4 teaspoon jelly, and cover with remaining batter. Bake at 400 F. for about 12 minutes or until toothpick inserted in center comes out clean.
